Introduction

The environmental impacts that the planet is sustaining from climate change have transformed the research carried out on tourism and gastronomy. Without a doubt, the trends on which research will focus depend largely on the environmental and social challenges that humanity faces. There are topics begin to gain strength at an international level such as resilience, adaptability, artificial intelligence, rescue, preservation and, regeneration of resources, food solvency and sustainable gastronomy, and other topics that continue to be important and are evolving and strengthening around. to new methodologies for the study of tourism and gastronomy at a local, regional, and international level.

Objective

Therefore, this handbook integrates at an international level those topics that will be trends in tourism and gastronomic research and that can support students, academics, researchers and, professionals, government and, NGO administrators to make decisions and generate public policies that support the resilience of tourism and gastronomy activity as a generator of foreign currency.

Submission Procedure

Researchers and practitioners are invited to submit on or before May 31, 2026, a chapter proposal of 1,000 to 2,000 words clearly explaining the mission and concerns of his or her proposed chapter. Authors will be notified by June 14, 2026 about the status of their proposals and sent chapter guidelines.Full chapters of a minimum of 10,000 words (word count includes references and related readings) are expected to be submitted by August 2, 2026, and all interested authors must consult the guidelines for manuscript submissions at https://www.igi-global.com/publish/contributor-resources/before-you-write/ prior to submission. All submitted chapters will be reviewed on a double-anonymized review basis. Contributors may also be requested to serve as reviewers for this project.

Note: There are no submission or acceptance fees for manuscripts submitted to this book publication, Centering Tourism and Gastronomy as Drivers of Sustainable Change. All manuscripts are accepted based on a double-anonymized peer review editorial process.
